GRILL-A-MEAL

2 tablespoon olive oil or butter Combine vegetables with water and place in 3 qt. microwave safe bowl, cover with plastic wrap and microwave on high for 5-6 min, or until vegetables are hot and just beginning to cook. Drain and add salt, pepper, garlic powder and herbs. Place mixture on large square of foil, top with olive oil or butter and bacon. Wrap securely place on grill 25-35 min or until vegetables or tender. Great with grilled chicken, steak, or even burgers and hot dogs.

With the heat outside most of us do not want to heat up the kitchen inside, so the next best thing is heating up the grill. The great thing is that you can cook an entire meal on the grill, fruits, vegetables, meat, fish, poultry. Our appetites are slowing down in the summer and we like to eat on the lighter side. Grilling is also a good way to impacted bold flavor without a lot of fat and calories. Since the intense heat of the grill brings out the foods natural flavors, there is no need to cook with butter or fat oils. Instead I like using citrus based marinade sauces, or rubs to enhance flavor. Try olive oil instead of butter, you will save calories. Remember, the grill doesn't just have one temperature, SCORCH!! You can arrange and bank the coals to create different heat zones. Cooler for vegetables and fruits and hotter for meats.

GRILLED BANANA SPLITS 8 wooden skewers 2 large firm bananas cut into 1-1 1/2” pieces 1/4 small pineapple peeled, cored and cut into 1-1 1/2” pieces 8 large strawberries 1 teaspoon brandy, rum o pineapple juice. Vanilla ice cream (or flavor of choice) Carmel, butterscotch and or chocolate topping Chopped pecans toasted Soak skewers in warm water for 30 minutes to avoid burning. Thread banana chunks, pineapple, and strawberries onto skewers leaving 1/4 inch space between pieces. In a small bowl combine melted butter and brandy and brush mixture over fruit and grill for 5 to 10 minutes until fruit is warm and slightly brown. Drizzle topping over ice cream and add grilled fruit then top with pecans! Yum!!

MUSTARD BROWN SUGAR GLAZED CHICKEN 1/2 cup prepared Dijon-style mustard 1/2 cup pack dark brown sugar 1 level teaspoon ground allspice 1/4 teaspoon crushed red pepper (or more to taste) 4 (6oz) boneless chicken breast cooking spray Spray grill or broiler with cooking spray. Combine first 4 ingredients in a small bowl, stirring well. Reserve and set aside 1/4 cup sauce mixture. Place chicken on grill rack. Brush half of remaining mixture over one side of chicken. Grill chicken for 3 to 4 min. Turn chicken brush over with remaining sauce, grill 3 to 4 min or until done. Drizzle the sauce you reserved over the chicken when ready to serve.

Fair season is upon us and Missouri seems to have plenty to go around. From small town fairs, to county fairs, to the Missouri State Fair the summer is filled the fun and excitement of fairs and festivals. Here is a list of upcoming local events:

Southfork Regulators return to Blackwater

BOONE COUNTY FAIR July 22-30 Boone County Fairgrounds, Columbia

The Southfork Regulators, an old west re-enactment group, will return to Blackwater on July 9th. During their visit in May they staged a bank robbery, train robbery, shootout at the OK Corral and comedy shootouts throughout the day. They were a huge hit with visitors.

No one will argue with the statement that “California has the finest grape growing conditions of anywhere in the world.” France, the birthplace of modern wines and wine styles has one of the poorest. That nation is both blessed and cursed by the whims and fancies of the gods of weather and therefore very vintage sensitive. The wines of France vary, often greatly, from year to year and thus the need for vintage

dating. The same is not completely true of California. Although there are variations they are most often not catastrophic so in the case of the average consumer vintage dating has little meaning. Presently arriving on dealers' shelves and in restaurants are the wines of the 2009 and 2010 vintages. The reason for the lag in dates is that some wines, mostly the reds, need both barrel and bottle ageing time to mellow and lose their rough edges. Big House has just released their latest vintages and they are definitely worthy of your interest.

We will not however, dwell on the names or the comic book labels; we have groused enough about that. Needless to say, it is what is inside the bottle that

counts and not the outside, unless you collect comic book labels with silly names: at least we got in one cheap shot. 2009 Big House Red ($9.99/750ml $22.99/3 Liter). This wine is a blend of fourteen different red grape varieties with petite sirah and syrah making up the lion's share of the blend. With all of these varieties being used you can expect a rainbow of fruit flavors and aromas and you most certainly will not be disappointed. The aroma is alive with the sensation of blackberries, blueberries, strawberries and subtle hints of leather and spice. The flavor is a cranberry patch ending in a finish of vanilla and sweet cherries. This is a wine that can accompany almost anything and is a standout for barbeques. 2010 Big House White ($9.99/750ml $22.99/3 Liter). The winemaker brags that the grapes for this wine were picked at night. With a label like Big House, it makes one wonder if they are referring to grape rustling. Going by the motto “to the pure, everything is pure,” we will assume that their grape acquisition was on the up and up. The 2010 Big House White is a blend of some of the most popular and fragrant of the white wine grapes; malvasia bianca, muscat canelli, viognier, gewurztraminer, pinot gris and riesling. The flavor is a melody of peach, apricot and

tropical fruits and ending in a burst of summer fruits in the finish. This wine is a fine choice for warm weather outdoor entertaining. 2010 Big House Unchained “Naked” Chardonnay ($9.99/750ml $22.99/3 Liter). Don't expect Big House vintners to do the usual treatment of this very popular grape variety; they do not. This chard is presented in a totally natural “naked” condition, unoaked and without the final softening fermentation often used in California. That is not to say that the wine is sharp or acidic; it is not and all of the flavors and aromas are derived solely from the grapes. The flavors that emerge are crisp and clean, stressing fresh apple with just a hint of citrus and tropical fruits. It is a delightful wine that we are sure will please even the most serious wine lover. 2009 Big House “The Usual Suspects” Cabernet Sauvignon ($9.99/750ml $22.99/3 Liter). The winemaker at Big House must have taken the old Japanese philosophy of “take the obvious and reverse it” seriously because this wine is definitely different than the “Usual Suspects.” This cab is a huge, full flavored, jammy wine that displays so many fruit flavors and aromas that there is not enough room here to list them all. Where a cabernet sauvignon wine is usually deep, somber and contemplative, this wine is a carnival, a fiesta, a romp. Forget everything you know about cabs, this one is different and we recommend that you try it.
